FLOUR
TORTILLAS
Life was hard for Tirso Yepez as a teen in La Haciendita. As he describes it, there was nothing in the ranch. Nothing but cigarettes and matches. He had for years tried unsuccessfully to convince his older brother to let him go north. He knew of men who had found work in the United States and wanted to try his luck. But it wasn’t until a man came looking for workers to join him in Texas that he finally received his brother’s blessing.
Over the next several years, Tirso would migrate back and forth from the United States, tramping on railroads that’d take him to northern Mexico, to Clovis, New Mexico, and Edinburgh, Texas. It was during these trips and while working in American farms, where he learned the recipe for his infamous flour tortillas. The ultimate comfort food, Tirso has perfected the recipe over the years, preparing them with great love and affection for his family.
